Buttermilk Caramel Syrup

Makes about 1 1/2 cups

INGREDIENTS

3/4 c. buttermilk
1 1/2 c. sugar
1 stick real butter
2 Tbsp. corn syrup
1 tsp. baking soda
1 tsp. vanilla

DIRECTIONS

1. Combine buttermilk, sugar, butter, corn syrup, and baking soda in a soup-sized pot. It will boil over if you use a smaller one.

2. Bring ingredients to a boil and reduce heat to low (as long as it's still bubbling). Cook, stirring very frequently, for 8-9 minutes. When it's done, it should take on a luscious golden-brown color like this.
3. Remove from heat and add vanilla.

4. There will be foam on top. It tastes just as good, but it's not super pretty. If you're into aesthetics, you can skim it off; otherwise, just give it a good stir.

Keeps for 7-10 days in the fridge. Serve warmed or at room temperature.

Creamy Lime-Cilantro Ranch Dressing

INGREDIENTS
1 pack (1oz) Hidden Valley Ranch Dressing Mix
ignore directions on the packet
1C mayo
1/2 C milk
1 lime
2 cloves garlic, roughly chopped
1/2 C roughly chopped cilantro
1/4 C La Costena green salsa
hot sauce (optional)

DIRECTIONS
Place milk, mayo, and ranch mix in a blender. Juice the lime in there too (you should get about 2T juice). Toss in the garlic, cilantro and green salsa. Blend. Sample it and add hot sauce to taste (if desired). Make it several hours ahead of time to allow it to thicken.

Poppy Seed Dressing

INGREDIENTS
1/2 cup mayo or Miracle Whip
1/4 cup milk
1/4 cup white sugar
1/8 cup distilled white vinegar
1 tablespoon poppy seeds

DIRECTIONS
In a small bowl, whisk together salad dressing, milk, white sugar, vinegar, and poppy seeds. Chill until ready to use.

Serve with a variety of salad combinations:

Spinach, Strawberries, and Almond Slivers

Spinach, Fuji Apples, Dried Cranberries, Candied Pecans, and Feta Cheese Crumbles

Lemon Sauce

INGREDIENTS

3 tbsp. sugar
3 tbsp. fresh lemon juice
3 tbsp. soup stock
1/2 tsp. salt
2 tsp. cornstarch
1 tsp. sesame oil (optional)
3 drops yellow food coloring (optional)

DIRECTIONS
Bring to a low boil, then simmer on low until thickened. Best served atop chicken.

Pizza Sauce

INGREDIENTS

1 6-oz. can tomato paste
6 oz. water (just use the empty tomato paste can)
3 Tbsp. garlic bread seasoning
1 Tbsp. sugar or honey
3/4 tsp. onion powder
1/4 tsp. red pepper flakes (optional)

DIRECTIONS

Mix ingredients and allow to stand until ready to use. Covers two average-sized pizzas. Freezes extremely well.

Teriyaki Sauce

INGREDIENTS
1 tablespoon cornstarch
1 tablespoon cold water
1/2 cup white sugar
1/2 cup soy sauce
1/4 cup cider vinegar
1 clove garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper



In a small saucepan over medium low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.

Spinach Salad Dressing

INGREDIENTS
1/2 cup sugar
1/2 cup red wine vinegar
2/3 cup oil
1 tbls poppy seeds
1 small red onion sliced (I prefer about 1/2 an onion)
1 teas dry mustard
dash of salt

Mix all ingredients together and let sit a couple of hours (overnight is best as it makes the onions sweeter).

1 Part yellow mustard
2 Parts mayo
2 Parts honey

Wisk together.
