Pita Chips

INGREDIENTS

12 pita bread pockets
1/2 cup olive oil
1/2 teaspoon ground black pepper
1 teaspoon garlic salt
1/2 teaspoon dried basil


DIRECTIONS
1.Preheat oven to 400 degrees F.

2.Cut each pita bread into 8 triangles. (For thinner pitas chips, split the pitas than cut them into triangles.) Place triangles on lined cookie sheet.

3.In a small bowl, combine the oil, pepper, salt, and basil. Brush each triangle with oil mixture.

4.Bake in the preheated oven for about 15 minutes (7 minutes for thinner pita chips), or until lightly browned and crispy. Watch carefully, as they tend to burn easily!

Eat with whatever sounds good. Great with hummus.

For a sweeter twist, sprinkle with cinnamon and sugar, instead of salt, pepper and basil. Serve with a fruit salsa.

Guacamole

Ingredients
3 - 4 Haas avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne (if you like it spicy; I use less)
1/2 medium onion, diced very small
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced

Directions
In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.
